Directions: Bring 7 cups of water to a rolling boil; Whisk in soup mix and one (14.5-ounce) can of petite diced tomatoes; Bring to a boil; Reduce heat and simmer uncovered for 20 minutes, stirring occasionally; Enjoy! For a hearty tortilla soup, add 1 pound shredded cooked chicken. Shore Lunch Tortilla Soup Mix Recipe Variations: Tortilla Lime Chicken Roll-Ups - In a large pot, place 2 pounds cooked, shredded chicken; set aside. In another pot, boil 6 cups of water; whisk in dry soup mix, 1 (6-ounce) can tomato paste, 1/2 teaspoon hot sauce and 1/4 cup fresh lime juice. Simmer for 20 minutes, stirring often.
